  31. 1 cup basmati rice
  32. 2 tbsp oil
  33. 1 tsp jeera
  34. as per taste Salt
  35. for Mint lassi
  36. 1 cup yoghurt (curd)
  37. 10 leaves mint
  38. 1 pieces ginger
  39. As per taste salt
  40. 4 ice cubes
  41. 1/2 green chilli
  42. 1/4 teaspoon cumin powder

Steps to make to make Palak Paneer with Tawa roti,daal tadka with jeera rice,Green salad and Minty Lasi

  1. Palak paneer: Mix the entire pack of spice mix to 1 cup milk to make paste Heat 2 tbsp oil in pan, added chopped tomatoes and cook for 4 mins on medium flame then add spice mix paste and cook till oil separates. Add palak puree,paneer cubes and cook for 2 mins.serve hot with roti
  2. Tawa roti : Mix the dry ingredients together, add 1 tablespoon of oil and yogurt mix it well. Then add the water gradually to make very soft dough but not sticky. Knead the dough on a lightly floured surface, knead the dough well. Apply light oil to the dough and cover. Let the dough sit for about 3 hours in a warm place.
    Dough should be about 1-1/2 time, knead the dough again on a floured surface.
  3. Divide the dough in four parts, lightly roll into the flour, cover the balls and let it sit for about five minutes before rolling.
    Roll the naan one at a time on a lightly floured surface little less than 1/4 inch thick. Sprinkle the water lightly on one side of the naan.
    Heat the tawa on medium heat, to check if tawa is ready sprinkle the few drops of water on tawa, water should sizzle.
  4. Put water side naan over tawa, once the naan start bubbling and dough start drying, turn the tawa over flames keeping about 2 inch away from the flames to cook the naan from top. Note: yes naan will stick to tawa and will not fall of, this the reason you cannot use the nonstick skillet.
    Once naan browned to your satisfaction, remove, and spread the butter mix over. Place in an on a plate and cover with a cloth to keep warm until serving. Naan is ready!
  5. Daal tadka : To a pressure cooker add toor dal along with turmeric, 1 teaspoon salt and 3 cups water.Pressure cook for 4 whistle on high heat then lower the heat and let it cook for 3 to 4 minutes. Let the pressure release naturally. Set it aside.For the tempering/tadka, heat 2 teaspoons ghee in a small pan. Once the ghee is hot, add 2 chopped garlic cloves. Also add hing and green chilies then add it on boiled daal
  6. Preparing rice: Rinse basmati rice till the water runs clear of starch. Soak the rice for 30 mins and then drain all the water. Keep aside.
    Heat 4 cups water till it comes to a boil. Add rice and salt. Simmer the rice on a low flame uncovered.
    The rice grains should be cooked till tender and yet separate. Drain the water and keep the cooked rice aside.
  7. Preapring jeera rice tapka : Heat oil in a small pan. Add cumin/jeera.
    Let them crackle. They have to be fried well otherwise you will taste uncooked cumin in the rice.
    Add the tempering to the hot or warm rice.
    With a fork, gently mix the tempering with the rice grains. Even if some rice grains break, it's alright. Do gently taking care so as not to break the rice grains.
    Add coriander and gently mix or garnish the rice

    To prepare this delicious lassi, add the mint leaves, yogurt, green chilies, ginger and salt in a food processor.
