- 2 tbsp Lemon juice
- 1/4 cup Water
- 3-4 Green chilli
- 4 tbsp Coriander leaves

- 1 Carrot large (peeled, washed & grated)
- 1 Cucumber medium size (peeled, washed, grated & squeez out the juice)
- 3 Snake cucumber (tarr) (washed & chopped)
- 1 Tomato medium size (washed and chopped)
- 1 Onion chopped
- to taste Salt
- to taste Black pepper powder
- 5 cups Unsour Curd
Steps to make to make Pineapple fried rice with mixed vegetable raita
- For Pineapple fried rice :
- Heat oil in a wok/kadai. Add chopped pineapple. Cook it on high for 3-4 min. Keep on stirring after intervals.
- Add capsicum, mix it and cook it on high for 3-4 min. Now add garlic, green chilli and onion. Mix well. Cook on high till light brown. Now add raisins and cashewnuts. Mix well. Cook on high for 3-4 min. Add salt, red chilli powder and black pepper powder. Mix well on slow flame. Add soya sauce. Mix well.
- Add water and again mix well on slow flame. Add boiled rice. Mix very well so that the rice gets well coated with pineapple mixture.
- Add lemon juice, mix well. Add coriander leaves and mix well. Transfer to a serving plate. Serve hot with raita.
- Method for Raita :
- Take a bowl. Add curd and whisk properly, so that no lumps should remain. It should be smooth. Now add in all the given ingredients and mix well.
- Transfer it to a serving bowl. Cover it and keep it in fridge for 1/2 hr. Serve with rice, pulav, biryani or the way you like it.
