  1. 1 kg Rice (soaked)
  2. Oil for cooking
  3. Whole spices (clove, cardamom, bay leaves)
  4. 4-5 medium sized onion finely chopped
  5. 5-6 medium sized tomatoes
  6. 1 tbsp Ginger garlic paste
  7. 1/2 TSP turmeric powder
  8. 1 &1/2 tbsp red chill powder
  9. 1/2 tsp garam masala powder
  10. 1 tbsp lemon juice
  11. 1 cup curd
  12. 1 cup mint leaves
  13. 1 cup coriander leaves chopped
  14. 3-4 green chillies
  15. Vegies of your choice
  16. Garnishing
  17. 1 cup fried onion
  18. leaves Few mint
  19. 2 tbsp milk with saffron
  20. Food colour

Instructions to make to make Vegetable pulao

  1. Wash rice and keep aside to get soaked for about 20mins in water.
  2. Fry veggies in about 2 tbsp of oil. Do not burn or deep fry just saute the veggies. Keep aside.
  3. Heat oil in a pan and add whole spices to it. Add onions and fry until it becomes transparent. Now add ginger garlic paste to it and fry until the raw smells vanishes.
  4. Now add turmeric powder, chilli powder and garam masala powder and mix. Add tomatoes and saute well. To this add mint leaves coriander leaves, green chillies and lemon juice
  5. Turn of the flame and add yoghurt. Note: never add milk or yoghurt while cooking on flame.
  6. Turn on the flame and add little water and allow to cook.
  7. Meanwhile boil water and add soaked rice. To this add salt, bay leaf, lemon juice or oil. Do not over cook rice. Strain when it's half cooked.
  8. Add a layer of rice, vegetable gravy, rice, vegetable gravy and again rice. Garnish with fried onions, mint leaves and pour the safforn mixture on the top. Cook on low flame. Your delicious veg pulao is ready to serve.
