Ingredients and spices that need to be Make ready to make Malabar Veg Biryani:

  1. For Rice
  2. 1 cup Basmati Rice
  3. 3 Cloves
  4. 2 Cardamom
  5. 1 inch Cinnamon
  6. to taste Salt
  7. 13/4 cup Water
  8. 1 teaspoon Ghee
  9. 1 small Bay Leaf
  10. For Veg Masala
  11. 2 Onion sliced
  12. 1 Tomato finely chopped
  13. 1 tbsp Ginger garlic paste
  14. 2 tsp biryani Masala
  15. 3 tbsp Ghee
  16. 1/4 teaspoon Pepper
  17. 1/2 cup Water
  18. 2 Star Anise
  19. 1 Bay Leaf
  20. 1/2-3/4 cup chopped veggies (Carrots, beans, peas, potato, cauliflower florets)
  21. 2 tbsp Curd
  22. 3 Green Chilies crushed
  23. to taste Salt
  24. For Garnish
  25. 1 tbsp Ghee
  26. 3 tbsp Cashews
  27. 3 tbsp chopped Coriander leaves
  28. 1 tbsp chopped Mint leaves
  29. 1 Onions finely sliced
  30. Lemon juice as required

Steps to make to make Malabar Veg Biryani

  1. Soak rice for 1 hour
  2. Clean and drain excess water. keep it aside
  3. Melt 1 tbsp ghee in a pan, fry cashews and keep it aside
  4. In same pan, caramelize onions and keep it aside
  5. In a separate pan, melt 1 tsp ghee, add bay leaf, cloves, cardamom and cinnamon
  6. Add rice and mix well
  7. Add water and salt.bring to boil. cover and cook until 80 percentage done
  8. Fluff rice with fork on a plate and keep it aside
  9. In cooker, melt ghee, add bay leaf, star anise, ginger garlic paste, chillies and saute for 3 min
  10. Add onions and saute until translucent
  11. Add tomatoes and saute until soft
  12. Add biryani masala and pepper. mix well
  13. Add curd, salt, veggies and water. mix well
  14. Pressure cook on high heat for 1 whistle or until parboiled
  15. Grease a handi. Layer with 1/3 rice.sprinkle little lime juice
  16. Add half of chopped coriander and mint leaves
  17. Add veg masala on top
  18. Repeat the layers, the last layer being rice
  19. Garnish with fried onions and cashews
  20. Cover with foil and lid
  21. Heat tawa, place pan containing very hot water with lid
  22. Place biryani handi on top. cook on low heat for 15 minutes
  23. Gently mix the cooked biryani. Serve hot with raita and salan
